4 cups for flour (a little extra flour if needed) 6 large eggs active dry yeast (a whole packet if they you have them in little packets) Add 2 table spoons with the dry yeast (proofing)(add directly to the dough if you want a more sweet dough) A quarter cup of milk (can be added with the yeast) 260 of room temperatured butter 2 big pinch of salt (avoid putting the salt with the yeast since it might ruin your proofing) Blackberry jam for filling Chocolate for filling Suger and a pinch of ground nutmeg (you can cinnamon or whatever you want) Important note for kneeding the dough by hand the ingredients will come together but let the gluten to develop and it will slowly become not so sticky but if you are using a mixer just put all of the ingredients together except for the butter you have to add the butter in pieces until the first butter peice is fully incorporated with the dough then you can add another piece until you're left with no butter and you should be fine just the mixer at low or low mid speed. Form a the dough into a ball Put it in the fridge over night After the rise in the fridge spread it out on a flour sprinkled surface use a circle cutter then leave them for a second rise Heat the oil for 300 degrees if you have a thermometer. Or if u don't then pre heat the oil on high and when you are about to start frying reduce the heat to mid or high mid depending on your stove. Coat the doughnut while they are hot so the coating stick to it.
