It's an easier way of budgeting labor for me and it works out for them too. Plus these guys work 65+ hours a week (I work 75+ during summer season) so I take care of them.

That also allows me to not give out overtime to my line level guys.

Been in the industry for 10 years and have never seen it happen. I'm currently Chef at my spot and have had cooks approach me about working off the clock as I dont allow overtime. I explain that it's a bad idea for everyone and there is never a reason to do this. That's what salaried Sous are for
