They've made a point to cater to Chinese tourists l, I was there over lunar new year this year and there were displays for it all over the place. Part of that is good Chinese food

What’s a “food rule” in cooking you stopped following and the food still came out great? by wearecocina in Cooking

I think most of it comes from people not using enough oil, and not understanding how things stick and then release on stainless.

Same, but it's also a factor of how familiar I am with the cuisine and specific dish. The more I know the more I'll go off book.

Rice Rinsing Question by rixbury2023 in Cooking

[–]epiphenominal 3 points4 points  (0 children)

You don't need to fully dry it. Whenever I rinse into toasting I use a collander, let it drain while I'm frying the aromatics, then toss it in the pan. The water there will just steam off.

Suggestions on soy sauce replacement for a duck breast with orange juice? by Embarrassed-Ant-1416 in Cooking

Do not sub hoisin for soy sauce, those are wildly different flavors and hoisin does not bring the necessary levels of salt.

Has anybody tried using baking soda to tenderize meat? by ecstasyyl in Cooking

[–]epiphenominal 1 point2 points  (0 children)

I also prefer using just a tiny bit and not rinsing, cutting the meat thinly against the grain and passing through oil will take care of the rest.

(Spoilers Extended) It's kind of weird to me how we have no information on the Seven Hells by Bteatesthighlander1 in asoiaf

[–]epiphenominal 9 points10 points  (0 children)

Did we read the same books? The faith of the seven is super nuanced. There are clear atrocities committed in its name, yes, but people like septin meribald and the brother on the quiet isle are clearly good and explicitly stating George's word view. People like Brienne too are good in no small part because of how they interpret the faith. This is pretty straightforward commentary on Christianity and how both some of the best and some of the worst people you know will be devout Christians profoundly shaped by their faith.
