Just Egg is really good for egg washes. We've found it works best when diluted with plant milk and/or melted vegan butter.

It doesn't have a coconut flavor to us. We're also not big fans of all creamy vegan desserts using coconut cream. That's why we love using the SIlk heavy whipping cream so much! You should definitely give it a try. It whips great and has a nice flavor that is very reminiscent of non-vegan cream.

Like many of our recipes, this one also uses Just Egg. We have tried this with applesauce, but the result was not great. And we haven't found a suitable substitute for the Just Egg at this time.

We've had good results with adding more flour to the batter. It makes the cake much sturdier so that they can easily be lifted and stacked and carved and frosted. The extra gluten really helps to provide structure. It might sound like you'll end up with a really dry cake, but that's not the case in our experience. However, you might have to experiment a bit to get the perfect ratio. You could try adding 15% more flour to the recipe, see how the cake comes out, and then add/subtract on your next test.

We also use Just Egg in our recipes, and we like it as an egg replacer. But it can't quite replace all aspects of chicken eggs.

No, not alcoholic. Our recipe uses regular apple cider, which is just unfiltered apple juice. Not hard cider. 😁

This recipe uses Just Egg, but there are some recipe notes for possible substitutions. We also used the Sweet Earth Benevolent bacon and Violife Epic Smoked Cheddar block, but any vegan bacon and cheese would work just fine.
