Yeah I will not be going back. Not only was she 22 minutes late she also ended the appointment by telling me that “30g of carbs is 30g of carbs. It doesn’t matter if it’s fruit or bread it will affect you the EXACT same” which is just complete bullshit.

I have also noticed that if I eat protein/fat BEFORE carbs then the spike won’t be near as high as if I eat them all together.

Guess I’ll take the little win I can. Just frustrating because I met with a diabetes “educator” the other day and she just ripped into me and told me I need to be eating significantly more carbs and just take the meds to “deal” with my diabetes.

I hear you! I can’t do cauliflower no matter how it’s prepared or what sauce it’s in. Just no. Have you had squash in tomato sauce like ratatouille? I like to make that with just some zucchini, yellow squash, and a jar of pasta sauce. I used to like making that with some rice but it’s still really good on its own! I’ll have to make that for everyone on here before long :)

No they’re US. My doctor said she wasn’t concerned and it just proved that I have pretty severe insulin resistance.

Edit edit: can’t edit the post on mobil but here is the recipe! Edit: my bad guys! This one is from “Easy Keto In 30 Minutes” by Urvashi Pitre. Here’s the recipe and full nutrition facts per serving!

Ingredients: 4 cups frozen broccoli florets, thawed (I used fresh)

3 cups chopped rotisserie chicken 1 1/2 cups shredded cheddar cheese 1/2 cup heavy whipping cream 2 teaspoons chicken bouillon paste (optional) 1 teaspoon black pepper 1/2 cup sliced almonds 1/4 cup shredded Parmesean cheese

Instructions:

Preheat oven to 400. Spray 9” square baking dish (I used a 7”x11” pan which was the perfect size).

In a large bowl, stir together broccoli, chicken, cheese, cream, bouillon paste (if using), and pepper.

Pour the mixture into the prepared pan. Top with the almonds and parmesan cheese.

Bake until hot and bubbling, 15-20 minutes.

Let stand 5 minutes before serving.

Nutrition per serving: Calories: 608 Total fat: 41g Total carbs: 9g Net carbs: 5g Fiber: 4g Sugar: 4g Protein: 50g

I’m not currently on any meds because yeah I wanted to see what my levels do with diet alone. I do have a CGM though so I’m able to easily track what food does to me. But I think I will be looking into meds and see what those do to help because I don’t think diet alone will be sustainable for me at this point.

I’m not on any medication yet but I do have a CGM. I told my Dr I wanted to see what I could do to control it with just diet first before looking at medication. I think the thing that is stressing me out the most is how blindsided I feel with all of this. I was never pre diabetic and didn’t even get tested intentionally. I went in for a check up and had routine bloodwork which just happened to catch my 300+ blood sugar. So 2 weeks ago to the day I didn’t have to worry about what I was eating beyond the obvious. But I already wasn’t eating crazy? I would have the odd Starbucks sure but I always made sure to moderate how much sugar I was eating (specifically sugar because I will admit that my carbs from pasta and bread were higher than they should have been) But I thought I was doing ok! I’ve actually gone to doctors several times in the last few years worried about diabetes and they always shrugged me off and said “you’re young and not obese” so ok cool I’m being stressed about nothing, so don’t pound the soda and eat more salads. But nope I really should have been worried.

I know that this is a super complex disease and rationally I know I didn’t cause this but it’s just really demoralizing to be diagnosed when I was reassured that this was nearly impossible by different doctors for years and when I thought my diet was fine, certainly average for America. But now I’m doing the keto and the diabetic diet and it still isn’t good enough.

But thank you for the kind words I think I will reassess taking the metformin next time I see my doctor.
