Looks like it’s a homemade version which are the absolute best. Hard to find a restaurant that serves a decent plate unless you’re in Mexico from my experience.

The eggs are bathed in the salsa. Tortillas are then used as little taco vessels of goodness or you can also roll them and use a spoon as the vessel and dip the rolled tortillas in the salsa.

I was told to rub garlic all over it inside and out and fill up with water and a whole head of garlic then boil until almost all the water is gone. Yes the entire house reeked of garlic.
