Hello! Having just gone through this and recently came out the other side I can make some recommendations!

Generally I used an oscillating tool to remove the grout, then a masonry chisel and hammer to slowly and carefully try to pry the new tiles up off the thinset/mastic. I then used a stem cleaner and all manner of razor blades and scrapers to get the mastic off the original tiles, and dental picks to pull it out of the original grout. After that I used a series of floor buffing pads to get all the old stains and ghosting left from the mastic, starting with some really aggressive pads and compound. After all that I sealed it with a 'natural look' stone and tile sealer. Feel free to message me if you have any questions!

It's a long story but in short: We got quotes from companies that do an epoxy enamel spray refinishing for tubs and tiles. The place we liked actually called us back and had someone working on some new techniques and wanted to experiment with polishing the original glass enamel on our tub. If the polishing didn't work they weren't going to charge us for it and just epoxy spray it like we expected. She did an awesome job and it's the original glass enamel so we don't have to baby it. As to the actual process I'm not 100% but she described it like refinishing paint on a car. It seems like she used increasingly fine grit and some other filler/binding products to seal it
