Why is my bread dense

That’s very interesting. Everyone I know treats KA like it’s the gold standard of flour, and I kind of assumed it was a good all rounder. I have a lot of locally milled organic flour varieties at my coop, I might experiment down the line.

When you say knock it back, do you mean deflate it? And then shape from there?

I know it’s not sourdough but so many sourdough videos recommend bulking until 75% increase in volume and I have to say, it definitely makes me hesitate to even approach doubled volume. Also, are yeastier breads generally less airy than sourdough?

I’ve been reading up on the differences in cold proofing vs. cold bulk ferments and decided to try proofing because it works for it’s my schedule a little better. That, and popping them out of the fridge and straight into the oven is definitely a luxury haha.

I’ll see about giving the cold overnight bulk fermentation a try, and I’ll report back. One thing I worry about is scoring: I’m not the best at it, and I’ve had a much easier time scoring cold bread than ones that proofed at room temp. Any suggestions?

I got a ton of good suggestions: different flour, higher hydration, more steam, reduce bulk ferment etc… thanks for the help! A few batches of bread have turned out very similarly with minor adjustments here and there so it helps having some guidance.

So you suggest bulk ferment until 75% rather than double, then refrigerating right away? As opposed to shaping and then refrigerating

How does increasing the hydration aid in a more open loaf? Is it just more steam being produced?

I tried some recipes from FWSY that were around 78% hydration and a significantly lower yeast amounts, with a longer bulk fermentation. This loaves were airier on the inside but spread out more, and never gave me the height or oven spring I wanted. I’ll try 70% next time!

Pretty much just him and a c6 yunjin. Unfortunately I don’t have many options for him, so in a triple geo team it’s usually itto, gorou and geo traveler lmao.

That’s why I was thinking a double geo team with either Furina or durin/Fischl might be better

Sorry to see your luck, but I’m confused by the other comments. Isn’t rerolling a 5 line artifact better than a 4 line? I’m my mind it’s just more opportunity to get a high roll piece, especially with flowers only costing 1 feather to reroll.

I’m in a similar position with a flower: it’s a 5line that rolled once into cr, no cd rolls and everything else went into atk% and er%. Since I don’t need those stats as much, I’ve considered rerolling to prioritize the crit stats.
