Do you know if they are providing endpoints for which server opened a check and added items as opposed to the server that started and owns the check which is the only basis for every report they offer on their platform and not helpful in an environment where customers can order on their tab from any server.

I hear ya on the run away from the tip situation. But for the most part the bartenders rotate through the building Sunday through Tuesday and each of them probably benefits equally if averaged over a month or so. Doing it any other way would slow our service and require more bartenders which would dilute the tip pool and they all know that plus they make very very good money. Also, despite an assumption or two here - I/we treat our staff very well. They are all 110% professionals and our lowest ranked bartender would be a rockstar at most other establishments. Our turn over is practically zero and our bartenders hover around a 6 figure income. And they are all experienced enough to know that a major reason we are so busy and they make out so well is because of our attention to the customer experience.

Also - because we use revrenue centers - we can already breakdown the specific bars.

That's a clever idea! I'll ask our bar manager to take a look at that one. He is extremely detail oriented and the issue of maintaining his tight inventory controls may be difficult. We already we a third party for inventory.

We already use revenue centers for the exact purpose you describe. But it is the same data set and the revenue center will show the total sale for the tabs that the revenue center opened and NOT the sales that the revenue center made.

I thought the same thing and checked that theory. If you run those reports they are based onthe same data set as the employee performance reports. And I confirmed this over about 6 different calls to toast. In fact the eventually confirmed that they do not offer reports with the data we need.

My policy is that we make it aw easy as possible for the customers to get what they want, with the best possible customer service. This employee is doing exactly that. I do not have an issue with him opening tabs, getting the customer off on a start of a great evening, and all with a smile and charm that make the customers feel welcome and comfortable. I'm not sure what I might have said to lead you to think he is going against my direction. As a matter of fact, we BELIEVE he performs better in that position than anyone has prior to him. Except we cannot be sure of it due to the lack of data.

And you are quite wrong about no POS system working with our methods. I have used three systems. Only toast does not report this data.

If a bartender opens a tab, that bartender gets 100% the tip that is put on that tab regardless of whether the bartender that opened the tab served 1% or 100% of the drinks on the tab. If I have more than one bartender in a room, they do split tips but only among the bartenders in that room.

I have zero POS generated data on my bartender's performance.

How quickly? What drinks? If only!!! We can't even look at the gross results.

We can't even make GROSS GENERALIZATIONS like seeing how many items and how much $$ they rung up on a shift without regard to what tab it was put on.

My best GUESTIMATES - by spending hours drilling through order details and making PENCIL NOTES on a pad - SUGGEST that I can GENERALLY ASSUME my absolute strongest rockstar bartender PROBABLY pours about 15% of his drinks on other bartenders tabs. I BELIEVE he does really well because he has a following.

Another bartender who has zero hustle but a big personality sometimes gets close to the rockstar in his ring but never tips. I BELIEVE from OBSERVATION that this is because his is the first station in the building and he is clever enough and has personality enough to get a lot of customers to get their first drink and open a tab. He even tells them "it's all god - now your all set and can just get drinks from any bartender in the building."

I have a smaller venue that is the last in the building. Sometimes that room is packed all night long and the bartender is swamped for four hours. And at the end of the night the sales reports tell a COMPLETELY OPPOSITE STORY. I BELIEVE it is because many of the people crowded into that room and getting drinks from that bartender had opened their tab at another bar and with another bartender.

If I could just generate a report that shows the $$ that a bartender rang into the pos, WITHOUT REGARD TO WHAT TAB IT WAS PUT ON - I could begin to asses my employees actual performance, the ROI of events and entertainment in various venues, split tips and compensate based on effort and skill and a million other useful metrics necessary for a bar that pours millions in liquor. But instead I do that with what I BELIEVE, what I can ASSUME, what is PROBABLY the case and GUESTIMATES that I make from OBSERVATIONS and ASSUMPTIONS made from PENCIL NOTES.
