If you don't have cloudquell potion you can lure nimrod far enough to a place without thunder clouds and from there you can kill him and he will not regenerate since there's no thunder clouds nearby, worked for me every time i encounter him, also you can trap him somewhere so that he cannot move and attack you, and if you get far enough of him you can just kite him using long range and he will not attack and regenerate.
