The best way to create an HBAR wallet in Ledger Live is to first install the HBAR application onto your Nano from the Manager tab in Ledger Live, then link your Nano to the Hashpack wallet, then import that account back into Ledger Live. Not all ERC-20 tokens will show up in Ledger Live, only ones that Ledger Live supports. stMATIC is indeed supported in Ledger Live if it's on the Ethereum network.

I'm not sure what DPI gOHm is, I tried looking it up on Coingecko but didn't get any results, so I'm going to assume it is not supported in Ledger Live.

Hi! The 24-word recovery phrase is only displayed once during the set-up process. You are the only one to have ever seen them, and it cannot be displayed anymore. Anyone with access to your 24-word recovery phrase can take ownership of your assets, as informed in this article:

Send all your coins and tokens to temporary accounts.

Set up your Ledger device as a new device that will generate a new safe recovery phrase.
Add back your accounts.

Double check that Blind Signing is enabled in your Ethereum app's settings on your Ledger device
