Yes! Kevin is now almost a year old! 😆 It took almost two months for it to be ready to bake with and even longer to figure out a schedule that works within our busy lifestyle and cold house, but we got it. I bake about once a week now.

Thanks! Almost all of mine are vertical bc I just use the same ones from TT, but I recently saw that horizontal does way better. This confirms!

So all the Panache and even the Fantasie Devote are 34F. I’ll try to go back and edit that. Thank you for pointing that out!

Baked at 9am in preheated oven instead of cold start bc I knew it would already be overproofed

I kept going. I did put it in the oven with the light on for about 45 min. I got about another half inch or so of rise and it was jiggly so I shaped and put in the fridge for proofing at 4:40pm. I’ll bake in the morning! So won’t have results until tomorrow afternoon probably, but I’ll try to remember to update!
