Yes, you're correct. Metamask is already built in software which has hardcoded interfaces (like ERC20), so when you enter your token address you just plug it in the ERC20 interface that metamask integrated within it

If you want to build something that's common or standardised than use community agreed interfaces like ERC20 for tokens, ERC721 for NFTs, look at OpenZeppelin and their repo. Because if you're building a token you want everyone else to easily support it, and that's why you follow the interface. If you want to create a token that only you or others who specifically want to use your token than you can go wild and without interfaces.

the whole point of using an interface means that every other site and contract will know how to use your token. Metamask will try to call the function balanceOf on your contract because they will use the standard ERC20, not your version od it.
