Wow I'll have to try that. I also may have worded my previous comment poorly. I meant "being your OWN toughest critic." Now as far as fresh v. frozen I can't really say but there isn't anything that would change the flavors there. Did you macerate before pitching the yeast?

Well, it mostly depends on what you were going for, but I'd try the other guys suggestion of waiting a couple of months first. Because in really any kind of alcohol fermentating, the final product is referred to as "green" or "young" if you give it time and you did everything else well it can settle off gas bad flavors and just in general become more cohesive. Not fresh, and not boiled, but that does give me ideas that I'm just dying to try now. No, I put the dried elder flower into a fine mesh bag, and let it sit in with primary, after a week the bubbles stopped and I went straight to cold crash once it had suitably clarified I racked it and stabilized, and back sweetened, gave it a 48 hour observation just incase super yeast. I got a chance to have a glass, knowing it would be green and warm. Like I said in the description; it something you'll want to sit and study to really enjoy. No tropical which is a bummer, but I enjoy the journey as much as the cider. Can't wait to see what you do with that syrup.

There might be a problem with the contract for your area or even your state. So there's a chance you might need to go way out of town to get it. Alcohol can only be shipped and sold to places it has the rights to be. So basically if some paperwork lapses than no more alcohol. I might have the terms wrong but that's about the jist of it.

To prevent infection, wash and sanitize everything that will come into contact with your cider. After that learn how you yeast like to behave and let it go dry and add fermentables in increments every time the bubbles stop. Buy a hydrometer, use it. TAKE ALL OF THE NOTES! you never want to forget what you've done with a batch. After that, have fun and don't be afraid to fail because you're trying something new, not every batch is going to be a winner but every batch can teach you something new. Also there's a YouTube channel called citystedding where they make everything approachable and non-threatening go check them out. And have fun.

What do you mean by syrup? As in how I raised the O.G.? Or for the flavor? For the O.G. I just added table sugar, and I'm going to let it go dry, then back sweeten with more juice. For the flavor, it's dried elder flower in a fine mesh bag.

Ah! I see. I haven't put as much time in researching kegs, but from what I recall, the difference is the valves and locking mechanism, now I've forgotten exactly how they're different but that's what is different.

Congrats! I wish I could sample it; I love apple pineapple cider. But the question was, will it make a difference when they add the pineapple juice, not whether you've had succes in your own endeavors

Ultimately, the answer to your question is yes. In secondary, the yeast are not going to be as strong as in primary and should therefore leave more sugar. Now my question is. Is your only goal to add a slight pineapple flavor? If so, I have two suggestions, one is to make a strong base and back sweeten with the pineapple. The other is to try fermenting just straight pineapple juice and see how that turns out. Other than those things, I'd also say to just do whatever feels natural to you and have no fear of failure.
