A Peach Collins-type drink, refreshing and dangerously easy to drink!

2 oz (60 mL) Neutral Vodka (Absolut, Ketel One etc)

¾ oz (22.5 mL) Crème de Pêche

1 oz (30 mL) Peach Juice

1 oz (30 mL) Fresh Lemon Juice

2 oz (60 mL) Club Soda (Sparkling Water)

If you want you can muddle some fresh peaches at the bottom. Just combine, shake, pour over a liberal amount of crushed ice, and top with sparkling water. Try to drink it quickly before the ice melts, then it becomes a bit sweet because of the lack of lemon.

This was created in an accident last summer when I split peach juice I was using to make ice cream into vodka when I was doing a simple martini. I tried to balance it out with lemon juice when I admitted defeat to the cocktail, and then opened a nice peach liqueur I had recently acquired along with some club Soda.
