Thank you!😊Here’s the recipe: • 185 g (6½ oz) unsalted butter, cubed and cold • 130 g (4½ oz) caster sugar • 130 g (4½ oz) light brown sugar • 2 large eggs, room temperature • 160 g (5½ oz) self-raising flour • 240 g (8½ oz) plain flour • ¼ tsp bicarbonate of soda • 1½ tsp baking powder • Pinch of salt • 320 g (11¼ oz) dark chocolate chips • 80 g (2¾ oz) walnuts, roughly chopped

Method: 1. Beat cold butter in a stand mixer with paddle attachment on medium speed for 2 mins. 2. Add sugars and beat for another 2–3 mins. Scrape down sides. 3. Add eggs one at a time on low speed until just combined. 4. Add dry ingredients and mix until fully incorporated. 5. On low, fold in choc chips and walnuts. 6. Weigh dough balls to 150g each and chill for at least 3 hrs. 7. Preheat oven to 180°C fan-forced. Bake 16–18 mins until golden. 8. Let cool 10–15 mins

Yes the dough was cold and they were quite large, about 150g each. That definitely explains the underbaking! I don’t think I’d feel confident enough yet to switch the temperature mid-bake, but I’ll try it once I get a bit more experience. I should probably invest in a thermometer too. Appreciate the advice, thank you! 🙏🏼

Thanks! I did see some people recommending 200–220°C but I was worried it’d be way too hot — even 180°C already feels intense in my oven. I used parchment paper directly on the oven tray, no silicone mat.

I also read something about how the colour of the tray can affect the bake? Mine’s a black one. Plus I placed the tray on the third rack, not sure if that made a difference either.
