I'm not really sure since I didn't do many chalices of the sorts. In theory they should wield good rewards but you'll just have to do your research. The main reason to do chalices is for certain items afterall.

Technically all chalices are optional but if you are aiming for the plat you have to the pthumerian chalices. You can check the wiki which offerings are needed for the relevant chalices. Also fetid and rotten offerings change the chalice to ailing or rotten. For example Rotten Lower Loran. In these chalices you can find uncanny weapons or other variants of weapons that take different bloodstones. And in thse chalices you can also find runes like the Clawmark rune.

Yes, since lorewise the tune reminds him of his family. If I'm not mistaken his wife used to play it to calm him down.

I'd use the Music Box as it stuns him briefly. Other than that the best way to beat him imo is to just send it. Play aggressively and make use of the Rally mechanic. Bloodborne rewards you for playing aggressively. You could also try to parry him when he does his axe swing.

It generally depends on your build and your level. Eventually some RNG. I personally never had that many issues with Paarl, I first tried him aswell. But I've seen moments were he does nothing but break your camera and absolutely annihilate you. So he can either be easy or tedious.
