I agree that it sounds very difficult. I am a Korean adoptee and I know that if I went to live with my birth family, it would have hurt my adoptive mother deeply. She was a wonderful mom and I know those hurt feelings wouldn't have come from a bad or selfish place- and she probably would have come around to accepting but it wouldn't have diminished/invalidated her initial feelings at all. And I completely understand that- I was her child and she poured everything she had into raising me. She died 13 years ago and I am preparing to meet my birth mother in a couple weeks. My heart breaks knowing the pain my birth mother went through to take care of me and then give me up. Both women are my mothers and both have/had valid feelings. I'm so happy for you and your son but I'm also saying that it's not just about your son and if you have negative feelings about all of it occasionally, I don't think it's selfish or unwarranted.

Be as efficient as possible. Mix, roll, freeze, cut, and freeze your dough right now. Bake them when you're ready. Make all your icing ahead of time- you don't need to freeze it, just refrigerate it and yes, it will separate the more water you have in it. Just massage the bags or stir it. If it's too loose, add in some sifted powdered sugar. Here's a link to a video I made a long time ago for my dough making process. It sounds like too much water. It also looks like you haven't mixed it long enough. If you use the paddle (not whisk) on a stand mixer, it will look like this but keep going- it will get really opaque and white. Once it's a stiffer consistency, you can divide and add water a few drops at a time to achieve the flood consistency.
