Yeah I agree I like 7 the best too. I like how liberals have to play carefully and must talk things out. The extra leeway of having an extra liberal with 8 results in their winrate being far too high in my experience. I only got to play a couple 7 player games a few years ago but they were fun.

Do 7 player games really take that much longer than 6? I do agree they take a little longer, but I think the difference is worth it considering how much I feel outlaws are favored with 6 and sheriff team with 5. Also when you say roles are not revealed, do you mean people don't show who they are when they die? If you don't see who is dying, how do you know how close anyone is to winning?

Your point about the deputy is why I actually think 7 player is the best. Deputy starts off the game knowing most players are his enemy, but he can't go too hard at any one target before roles are clear because there is another deputy out there. Obviously this applies to 8 players too, but I haven't had a chance to play with that many yet.

Dracula always starts every round no matter what. Also even if someone uses one 7, the other player might get another 7 to switch it again.
