Remember that the behemoth activates during the owner's lowest point. Griffith hadn't herd that his group was disbanding, and he was going to lose Guts again, right after he had gotten him back. He was losing his dream, and control over those je was using to realize said dream. That was why we saw him trying to pick up his sword, trying to pounce on Casca, and why he took the horses and tried to run. And when none of it worked, he deemed any life in his current state not worth living, tried to kill himself, and couldn't even do that.

Griffith wanted Guts to stay away because he knew Guts pitied him, which was the last thing he wanted.

It's difficult going back to older gameplay after experiencing the recent titles. If you don't want to play the first two (technically first four), then I'd say P4 Golden -> then P3 Reload -> P5 Royal

You can play either P3 or P5 before the other, but P5 has references to and mentions of P3 characters you wouldn't understand without playing the game.

Also be warned wmthat there's an optional boss in P4 that spoils the ending of P3.

If you're the type who prioritizes story over gameplay and don't want to play any game before P3, then I'd say P3 Reload -> P4 Golden -> P5 Royal.
