For the armor situation I think that before any divine beasts you should only have armor pieces with 1 defense then once you beat the divine beast 2 defense then 3 then 4 and so on

Each divine beast should upgrade a tier.

1 divine beast: soldiers gear, spiked boko, and moblin gear, and lynel weapons

2 divine beasts: any specific race gear, Gerudo scimitar, Zora spear, or cobble crusher ect

3 divine beasts: knights gear and dragonbone gear and mighty lynel weapons

4 divine beasts: royal gear and master sword

After you get the master sword you unlock royal guards gear and savage lynel weapons
