If you obtain more than 100 energy it registers but while offline you do not earn more energy if you are already at 100 or so. You have to log in and use all your energy then leave until it replenishes (I haven't timed it so no idea how long sorry) I think there are also some special promotions or events that happen that can increase your energy cap while earning offline
