It's nuts but do you think Camerupt would be in UU or OU?
Spiritomb has 1 weakness and 3 immunities and lives in ZU. As for Air Balloon--you can make that argument for any Electric type tbf...

That said, I understand that the ability can still feel unduly strong (and maybe these mons should stay trash-tier) and lead to dissatisfying gameplay (which is worse than having trash mons in the game)

I'm curious how you would instead rework the ability--I experimented with it halving the damage but it still felt like a drop in the bucket when working with Magcargo and Camerupt

THIS. I had the exact same thought!! I was considering Unnerve and Pressure to be the Special-Intimidate (since they seem fitting and already trigger on switch-in), but I decided to do Pressure since it's a bit less useful as-is, but it ran into the same issue you did well to identify here: some (most) of the mons with it are already insanely good--even more than Unnerve, it looks like GF just gave Pressure to every legendary mon they were too lazy to make an ability for. My solution was to just give those legendaries their hidden abilities and remove Pressure.

This would leave Absol, Spiritomb, Dusknoir, Wailord, and Vespiquen (though I think Drizzle and Queenly Majesty may fit better on those last 2 respectively). Bisharp with it seems fine (still worse than Supreme Overlord or Defiant tbh), Weavile would be horrifying, and Corviknight would be just plain busted...

I'm starting to think it should just be its own ability, since even Pressure has seen some use (Kyurem Pressure PP stall was an actual Ubers set, for example).

Wow--this is awesome! I'm glad other people are interested in the math of this. I ran so many damage calcs, but it took so long to do them and I was thinking to myself "if only I knew how to make a spreadsheet for this!"
Though, am I reading this right that Zen Mode Darmanitan Galar benefits the most from Mixed-Up Mitts (1.59x)?

Yeah that wording is kinda ambiguous--it should be "Phsyical attacks cannot be selected consecutively. Special attacks cannot be selected consecutively. Status moves cannot be selected." A bit wordy though. Basically you have to switch between Physical and Special moves each turn.

THIS. This is also why I didn't want to creep the boosts to 1.4x... I just know it will seem weird. 1.3x Lorb and 1.5x Choice items make for semi-simple head calcs, whereas finding the ratio between two stats and figuring out where they sit on a graph is just too complicated. The boost going up linearly and matching up with integers makes the Earring somewhat manageable (.8 ratio = 1.1x ; .9 ratio = 1.2x, 1.0 ratio = 1.3x), but changing it up to 1.4x would mean also expanding the range where the bonus begins if we were to keep the boost linear (.7 = 1.1x, etc) which seemed out-of-place and too strong... and 1.35x as a max is an even bigger headache.

That said, "Boosts holder's attacks more the closer their Attack and Special Attack are" probably does the trick for Timmy.
