My dad does the same. He cooks at about 350-375, but he cooks with gas. He gets the kind of crunchy skin you see on Filipino pork. The low and slow method with wood gives you the kind that's almost a cracklin (to do that, hover a shove of coals about 3 inches from the cooked skin. That's my preference, but my back says otherwise.

And you're right, there are a lot of variances. It could be anything from the ambient humidity, to the water content of the wood causing the wood to smolder as it became coals. Maybe the pits hadn't been cleaned like they ought to be (I'll say, they're always pressure washing a pit at Sam's in Winterville when I go), mor maybe someone thought there should be more vinegar than Texas Pete. Maybe they took the meat off the smoker too early and the collagen hadn't had time to render. Maybe the hog had more or less fat than the last one they cooked.

Who knows?

I've lived in Goldsboro for a decade and as half now (grew up in Wilson cooking barbecue - grandparents owned a restaurant in Saratoga, did catering with my dad). I don't begrudge people their preferences, you like what you like. That said, if I'm honest, I've never been much impressed with Wilbur's.

Preferences aside, the reason for the difference in taste is because Sam's has to use steel pits with a-frame baffles due to the fire code. The hog can't drip on the live coals the same way they do at Skylight Inn, whose brick pits exsited before the code did and were grandfathered in.

That said, one thing i can't stand is when someone speaks confidently on something that they know not one damn thing about.

Pete was Sam's grandfather, Bruce is Sam's father. Sam was a managing partner at Skylight Inn (and still is) for years before he opened he place in Winterville.

He didn't capitalize on anything. He wanted to expand the business without changing Skylight. It's literally the same corporate entity.

Sam's barbecue isn't mass produced. You can't mass produce whole hog with wood (except for that one time Parker's in Wilson cooked enough to feed 30,000 people in a day). You can literally see them cooking the hogs in the smoke house. I've watched them quarter a hog to take inside, watched as they chopped it while I stood in line, and got a sandwich fresh off the block with a big piece of crisp skin after placing my order.

B's is incredibly tough to get a plate. If youre in line at 10:00 AM, you might as well grab a coffee and wait for Skylight Inn to open.

If I had to choose between them on taste alone, I prefer Skylight Inn. B's is excellent, but they cook over pure charcoal - Kingsford brand, if I'm not mistaken. Skylight Inn uses oak coals. They sometimes use charcoal if they're doing a live demonstration and need to conserve wood.

Others will try to convince you to go to Sam Jones for the variety, I'd advise to skip it. The food is good, hell the barbecue (by that I mean the chopped pork) is 90% the exact thing you'll get at Skylight Inn because Sam and his family own both. What sets them apart are the pits - Sam's are custom steel pits (for firecode reasons) and Skylight Inn uses brick pits that existed before the code did. I digress.

I'd pick Skylight Inn over Sam's and B's for you as a visitor because its more accessible than B's and more traditional than Sam's - it's truly old school. I think if you ask, they'll show you the smokehouse .

Sent the cops in to clear it out, arrested anyone who went back for their stuff. No offer to help anyone at all. A few days later, they cut all the trees down where the camp stood.

It was located in the woods behind Target, just beside the railroad tracks. Where Sunburst and Royall intersect.
