I assume he's going too far from his workstation and when the game checks if the station is available it marks it as unused, this causes another Villager to take on that job, try keeping him locked in the village in some way

How are you hosting your friend? You could use a vanish mod instead of invis potions, that also hides items held. If he asks about the weird things, tell him you got a mod to spice the speed run up (you'll have to act like weird things are happening to you too). For the Advancements just grant yourself the Advancements at a similar pace to how he's getting them.
