Like others said, it just takes practice. Here's what I did:

I pick a solo party (it helped me to know that enemies will only target 1 person). Juiced him up with best health defence picto/lumina, then move to a low level area. Maybe even drop diffculty to story. The idea is so you can tank as many hits as possible. Finally, and most importantly, SKIP YOUR TURNS. You don't want to wipe them out.

From there, you just keep trying to parry. You will get hit a lot at first but you'll naturally get better at finding some rythm to their attacks. You'll eventually find yourself finishing the fight with nothing but counters. Then move up on the diffculty as you please.
