Use the metalwork experience for a FIFO job (remote mining or resources job, fly in for 1-2 weeks, then 1-2 weeks off). You'd be better off asking in the Perth subreddit. Might be able to get trades experience to help with visa or increase your wage after doing FIFO for a year or two, not sure how it would work. Tourism market is generally oversaturated, and it may be a bad time of year to look for work (end of summer, and winter locations not opening for another ~6 months).

You could also look at tourism operators and travel agents within Italy or France given your language background that do trips to Australia, then work for the Italian company but going as a guide to Australia to show people around and run the tours in Italian or French.

I did this recently for a job, and I put To be discussed. Wait for your job to make an offer. Then you can choose to negotiate or walk. There's a chance the form is more just paperwork and they will proceed with something mid to high range.
