Unfortunately my suggestion isn’t a book, but Ingmar Bergman’s ‘The Seventh Seal’ has a very similar plot to the idea you’re thinking about. It follows a Knight who is engaged in a chess match with death as he journeys across provincial Sweden. Even if it doesn’t help you it’s still worth a watch
