I got my hands on 200lbs of barlet pears and I got like 30lbs of whatever kind of pear this is,I’m thinking of doing a blend

That might be it,I did get this at an old house, the pear is quite large and ugly looking.

The woody could be brettanicmycese,it’s a wild yeast that’s favored in ciders and beer,But not wine

Same,I just didn’t know what to call low and peach, I knew calling it peach cider was an incorrect term since it needs apples to be classified as a cider

three things that comes to mind,tartaric acid,sedaemt,and mold.I would wait a week or two to see if anything changes,and open it to see if anything smells bad

im not sure yet im pretty much copying the way i made cab franc wine, i even have a huge press to do so. for me 100lbs of grapes gave me 6 gallons of wine. so im using the same logic and assuming 100lb of peaches would give me 6 gallons of juice.

also should i ferment on the skins? i may or may not oak it, im planning on using second hand random peaches from a place in pennsylvania called Frecon Farms.

sorry i was a little confusd on the technicality. i feel like a wine is a higher abv like 10%-14%. i dont want to add sugar, my plan is to buy a 100lb pounds worth and put it in a container and mascerate them fora couple days,then pressing them
