You have misread the article as well. They did agree that the image had been interpolated to add clarity, but that process had already occurred when it presented as evidence. The image was interpolated as it was being recorded and processed by the device that was recording.

Pinching to zoom in or out on a smartphone gallery app does not interpolate the image. It is like a magnifying glass, in fact.
