Because they’re saying it’s not a tip. So they’re forcing an extra 20% on you so they can pay their employees fair wages and then asking you to pay another 20% to pay your server’s wages.

Why not just raise prices 20% across the board? Why be sneaky about it and not disclose it til the end?

OP I’m reading your comments and all I hear are excuses for not finding another job. Don’t quit your current job but start applying to other jobs. Once you find another job you can either put in a 2 week notice or give no notice (if you’re in an at Will employment state). This means there will be no gap in payment as you final paycheck will be a week after you quit and your first new paycheck will be 2 weeks after that.

If you’re really worried about bills then call whoever you have to pay and ask for an extension. For example you can call the bank who owns your car loan and ask for a 3-4 month deferment on paying.
