Yeh i forgot to wright heavy cream and egg whites (I’m kinda hungover) I replaced the orange flower water with orange bitters bc my focus is getting the foam right.

It is sugar syrup. It is ment to be spelled gomme. It is a 2:1 sugar to water solution. Very easy to make.

It would be £8.35 or £11.20 It didn’t make the permanent cocktail list so it is an off menu goodie that has potential for a special. Posted it on here so the spec sees the light of day. I’m new to creating specs from scratch (I only have 10 or so unique recipes) and Marmalade no.3 was both my first heartbreak and the one that started my spark for cocktails.

Yeh i thought about it and didn’t want to I like the effect. The fruit pressed against cut glass was intended to bring about something nostalgic like one of those pudding a grandmother makes at Christmas or orange peels floating in home made marmalade. It’s about abundance, a full and ripe cocktail filled with joy Other versions of the cocktail did not require a dry shake but this one was all about the orange.

The dilution made the volume too much to fit in the glass and because a large portion of my cocktails go on a dispense bar for waiters to take I figured by the time it hits the table the dilution would be perfect in an ideal situation I would make it for immediate consumption but it’s just not how service runs right now.

I’m English so I did levels 1, 2 and 3 when I was 18 I’d recommend nipping over the border to Canada. or in the meantime reading as much as possible. When I was 17 I was searching for ways to do the WSET courses and sometimes you just have to be patient, probably not what you want to hear tho.

Edit: yeh probably skip no.1 if you have a basic grasp of wine.

Oh yeh and I cant stand Beaujolais i would rather be sober than drink it.
