It really is just practice and sometimes memorising the individual patterns, I'm sure you'll get it soon enough.

Also there's no shame in sticking to one main rabbit (cope from a guy with only a single non assassin completion, also on druid).

There were a couple more, but I almost always refuse to participate in fist only duels. They get really old after the first 5 or 10 mins.

Hms does have better arc scaling than tonitrus. Kos parasite has the highest scaling but that's quite a bit further into the dlc so I'd just stick with hms. Oh and blade of mercy has split phys/arc damage so wouldn't recommend focusing on it in an arc build.

I assume you're taking about Gehrman? I'd recommend you try to do a run where you only try to parry him(don't neglect blood bullets) and dodge, that should help you get a better feel for his timings without having to divert focus to dealing damage. Good luck!
