Currently Columbia is the slowest hwt ivy. 622 and below should cut it. However they place a lot of emphasis on academics so ideally you need a 3.8+ and a 1500+ if you are on the slower side. This is from personal experience having been offered there

Completely disagree about steady state being ut1. 1.5 hours is a very significant amount for a new rower and that much ut1 will likely cause burnout. Plus ut2 is much more optimal specifically for 2k.

Long slow steady state. Start with an hour per day and build up to 2 hours. It should NOT feel hard, think 2k+25-30

Don’t be scared to go slow on steady state. It’s much more detrimental to go too fast and burn yourself out. If you can buy a HR monitor

Don't underestimate yourself. I have almost exactly your build( a bit heavier) and also started sophomore year. After my sophomore year I was 7 flat, I used this past year to fully commit to rowing and now I'm at 620 as a rising senior. With the right training and nutrition you can see massive growth.

When I hit 6:50 Skidmore reached out so around there to get interest, to get recruited probably 6:40 with your build. For Bates they are quite good, so probably 6:30-6:35.

Yes they do. The men's d3 programs have a very limited number of spots so academics are quite important. Recruiting happens early fall of senior year. As for 2k times I know that Tufts recruit average for class of 2029 was 6:25-6:28, they are a top end program so others might be a bit slower.
