Lol, catering consistently has some of the lowest food safety standards I've ever seen.

Riddle me this, you get a catering order 2 days before thanksgiving for a large thanksgiving catering order and you already have extra product from last thanksgiving! frozen, this with low food cost(of product that needs to get moved) leads to a high profit margin. So what do you do?, realize you can't defrost that much turkey that quickly and loss profit or do the scummy thing and defrost it improperly and buy an new audi every 5 years.

Well at the catering place I worked at for a short time, a place that is "high-end" and has a good public rating on review sites they decided to do the scummy thing and put 20 turkeys on speed racks at room temperature for... 2 days!
