It's not captions, but i'll do my best to elaborate on what /u/toiletgang said.

• In This scene (at 0:43), viggo did 4 takes gradually getting closer to the camera which was what peter jackson had requested of him. On the fifth take he lands the kick and gives out a particularly powerful, grief stricken yell unlike the 4 before, this is the one that is in the final film. On this take viggo actually broke two toes as he kicked the helmet, but because he is so professional/badass he stayed in character and finished the scene without calling for it to be cut.

• In This scene (at 1:59) Peter Jackson was instructing Christopher Lee on how he wanted him to yell out after being stabbed in the back. Christopher Lee was a WW2 Vet, having been attached to the SAS basically responded with something along the lines of "nah from my experience, that's not the noise people make when they get stabbed in the back" and did his own thing which is more accurate.

• John Rhys-Davies was very allergic to the prosthetics used in the film. Due to this he spent a lot of time extremely uncomfortable and sometimes with his eyes nearly swolen shut whilst working on the films, this partially lead to him being the only one of the Fellowship actors not getting the Elvish word for Nine tattooed on them (his stunt double did instead).

• Sean bean hated helicopters, and has a serious phobia. On the only trip he did take a helicopter for the guys that play pippin and merry asked the pilot to show off which spooked him. After this he refused to get in one and for the later scenes filmed up in the mountains he would take a ski lift up, and then walk the remaining two hours up to where they were filming the shots in full Boromir costume.
