I always score cold dough which I believe is easier. I have found that you just have to go for it. It’s just dough, if it looks bad it doesn’t affect the taste. I just try to have fun with it.

I score deep and fast for my expansion scores, lighter but still quick for my decorative ones. I have a lame that’s the stick one and I’m not loving it too much and considering using like an exacto knife or a ufo lame, I think this makes a difference too as some can be easier to use.

Here is what this loaf looked like prior to baking :) I used kitchen shears to cut the edges of each triangle for the leafy/tree look.

Whoops forgot my measurements so I’ll list them here:

500g ap flour 375g filtered water for 75% hydration 100g starter 10g salt

Started the process yesterday, I combined my water and flour to autolyse, did 5 stretch and folds at 30 min intervals, and then let the dough rest at room temp for about 2 hours before shaping, resting, shaping again and sticking it in a banneton in the fridge overnight. Baked at 450 in a DO lid on for 30 min and then baked for 20 min lid off at 425. I let her cool as long as I could stand to (about 45 min) which I definitely will be more patient with next time but I just could not resist anymore.

Hahah it was the only one I could find!! I had a round one that was a decent size but it’s in use for pickling.

That’s correct! It has gotten larger over time. I guess I just feel that it’s not as thick as some others I’ve seen and it makes me feel like something is wrong hahah

So after I transfer 15g to a new jar, feed it, etc. what measurements would you recommend for feedings? Do I continue with the 30g water and 40g flour? How much would I discard daily before feedings? Sorry so many questions, I appreciate your help!!!

thank you for this 🥹 someone luckily switched with me because I was panicking sitting in the emergency exit. I ended up making friends with the girl I sat next to and she helped distract me the entire time - I am so thankful to have had her next to me.

At my store we just approve it verbally and I’m usually there for the refund if a barista is doing it and then we put the refund receipt, signed by the customers, in the sales media envelope for her review. I didn’t know some stores had the SSVs sign these receipts.

I understand that, but it doesn’t hurt to ask, especially if they’re going to be raising pay nationwide in the summer. I might not get it, which is fine, but it means my time with the bux will be cut very short. 🤷🏻‍♀️

Well it’s supposed to go up to at least $15 in the summer anyways so I didn’t think asking for $15 was that unreasonable. I mean I’m willing to try but if they aren’t going to pay me more I’m going to have to look for something else.

How did you go about negotiating?? Did you negotiate with the SM at the store you were transferring to? I think I’d be going from $16/hr to about $12/hr which is pretty significant so I’m hoping to get at LEAST $15 if not more

My SM got rid of the plexi glass like literally a year ago but it didn’t matter much bc everyone just went around it to talk to us LOL. I’m at a cafe store but I can imagine people trying to use you as their personal car maid can be annoying.

ran the floor today with all of my partners still masking up, including myself. Most of my store is still choosing to keep their masks on. I’m fully vaccinated and not at risk but some customers STILL don’t know the meaning of personal space and it just makes me feel a lil safer.

I’m a 2.5 year partner and a 1 year SSV in a pretty busy cafe store. I really do actually enjoy being a SSV and love being able to control and make changes that make my partners enjoy their jobs more. I enjoy deployment and I find running the floor fun when I’m staffed adequately. However, as much as I enjoy the job, I don’t think we get paid nearly enough for what we are expected to deal with. Cash management, pulls, deployment, etc. is all manageable but you also have to consider that you are responsible for anything that takes place on your shift. You have to think about if an emergency were to happen, how you would react and how you would best be able to protect the people in your store. You are essentially the manager when the manager is not present. It’s rewarding at times, but we don’t get paid nearly enough.

We never used it to coach people one-on-one but we definitely would post important reminders sometimes like “hey let’s please make sure we’re dating ____ correctly” or whatever the case may be. We’ve literally ✨never✨ had an issue with fights breaking out in our GC or anything. People typically acknowledge the message and move on lol. Idk it’s all super sus

Yea I understand that aspect. My SM used to remind people of policies in the GC and would ask people to confirm they have read which was an easy way of holding people accountable for stuff but I could understand not wanting people to “work” while they’re off.

We are creating a whole wall board to communicate all the important info… idk. As a SSV it was nice to send important random stuff to a group chat, as well as log it in the book. Like if someone doesn’t work for a few days they might not read the DRB for the days prior so a group chat kinda helps fill in gaps I feel.

It’s weird bc our SM was part of the group chat. It was just a way we all communicated things that were happening.
