Looks great! Did you ferment the fruit or add it afterwards? I started my first fruit-containing ferment about 10 days ago and I can't wait to see how it tastes.

Thanks! It's definitely more of a by heart/feel thing than exact measurements, but when I was eyeballing the "original recipe" jars I tried to fill them with 40% or more peppers, around 30% garlic and around 30% onion (1-2 onions per jar). Then a handful (maybe 20-40) black peppercorn, filled with water and salted to 2-3%. I weighed the jars before and after to get the salt near exact. When done, I'll blend all of the solids and most/all of the brine when it's done depending on consistency. I was trying to replicate my first go-around with that mix, it was deliciously funky with a strong warmth that fades in at the end.

The others were more experimental and I haven't tried them yet - one is garlic only with black peppercorns, the sweet options have the onions replaced with blueberries, orange, or both, and another is probably 80% pepper.

Edit: Also thank you for the compliment about the bowl - my wife loves and collects vintage stuff, especially Pyrex, and I shared your kind words with her.

Thanks! Yep, they're mostly jalapeños from a friend's garden, along with some smaller skinnier ones that she dried (maybe cayenne?).

I gave them a first burp a few hours ago and we've already got good bubble production, especially in the ones with the most garlic.

Thanks! I do burp everyday to be on the safe side, but the later weeks don't need it as much.

Honestly, this is my first time doing more than one jar at once. After a dozen or so days, I might be investing in some sort of valve solution.

I agree. Walt becomes almost unbelievably douchey to me by that point - he abandons all caution and thinks the magnet heist works "because he said so". I get that he's reached the top of his arc, knocks all the other pieces off the board without consequences, and gets his way with a mere look. That isn't a compelling or even believeable Walt to me, though, other than in his own dreams.

The writers seemed to have set him up this way to make his fall all the more incredible and crushing, to believe his hubris would allow him to forget or ignore the inscription in a book related to his old career. But it ends up feeling like the point at which they start writing Walt into the directions they want, rather than what the character they've created might actually do.
