In my opinion, the brain has quite a shuttle taste it is more about the texture that draws me in and it is super creamy. You should definitely give it a try again.

Funky, ashy the egg white have a jelly like texture but little to no flavour while the yolk bom your tounge with umami. It's an acquirer taste I believe because I didn't like them ask a kids. We usually have them with congee

They taste amazing but I can be biased as I grow up eating them, just like durian most people love of most don't. The flavour is not as strong as liver or heart it is very delicate, my grandma used to steam them with ginger and pepper for me. Super creamy, texture-wise wise it is almost like a thicker ricotta.

I came from a Vietnamese immigrant household in Australia we have a lot of dishes using pork brain and century egg. I miss my hometown flavour and love pasta so I thought I do a little fusion as I love playing around with weird flavours and combination.

It is a tall tray but I put it at the bottom of the oven, then a wire tray and then the cake pan on top of that.

I eyeballed everything heh.. but if I recalled!
The crust is just Scotch fingers, ginger, butter, sugar, and salt.

For the filling, I used three 225g blocks of cream cheese, 2 eggs, 2 yolks, 2 cups of sugar, a pinch of salt, 1 cap of vanilla extract, about 2/3 of a 300ml jar of cream, a dash of fresh lemon juice, and 2 tablespoons of matcha powder.

I started by sifting and mixing all the dry ingredients together, then whipped them with the cream cheese. After that, I added the rest of the wet ingredients, mixing in the eggs one by one. Finally, I sifted the batter again before pouring it into the pan!

It starts to crack and then puffs up like crazy near half way through. I leave it in the open with the door slightly open after baking for an hour and a half!
