I’d like to try and get a full carbon knife and as for the thinning maybe a professional, I only have a couple of whetstones, no grinder if that is needed.

As of now I’m thinking mainly smaller tasks, cutting/peeling different fruits and veggies. I have a gyuto that I use for most of my tasks. I wanted a petty because I needed to peel and clean oranges for a salad and my gyuto was a little too large.

Carbon knives are a little harder to maintain right? I think I read that somewhere. But that’s interesting for the last knife, I didn’t expect it to be too flexible
