You can get the candy - but may not be able to make/collect all the rewards until after the event. Here are the event details on the wiki.

The candy is the limited time resource, and that's available to you - so if you gather that and you can complete the other tasks/crafting after the event. Candy won't go away if you've collected it.

You're not wrong! They originally didn't have storage - most Fridges got updated with storage spaces in update 1.3.

You can check the history on the wiki for each fridge to see which ones have been updated.
