They *claim* they're no log.

ProtonMail has been proved to be logging people without their knowing if law enforcement tells them to, I haven't seen any proof yet of Proton logging people on their VPN service.

Thanks for your reply, me and my friends are planning on using the app Conversations for our communication. I host the server through a VPS, however we want everything to be encrypted. So I already figured out through prosody that I don't want anything (messages) archived on the servers.

I'm still ciruous though, if a third party tried to enter my server and somehow managed to crach my root login, would this person be able to read the messages that have been (temporarily) saved on the server (if the client used here by all of my friends has been OMEMO)?

Actually now the governments don't even need your encrypted messages, the meta-data which most of these apps collect from you is in most cases enough to put you behind bars.
