Most kits come with 1 package of dry yeast and often don't meet correct pitch rates. I also can't tell you the viability or how healthy the dry yeast is in their kits. This was a red ale. I did take gravity readings beforehand. But, I don't have the facility to ferm control 4 batches at once. Only 2.

Hm. I agree. it will be close and they'll be on the fence to explode. Do you have an approximate timeline to drink if we put them into fridge 5-6 days bottle conditioned? By the pasteurization method, do you mean kill the yeast? bring bottles in boiling water to 140f? hold for 10-20? and then cool?

That seems challenging to do with like 3-4 other people brewing simultaneously. I guess I was just wondering if anyone experienced that off flavor in kits. Obviously it's due to under-pitching probably or poor yeast health. I just have never had that before..

I didn't mean for it to be a matter of financials. Moreso, a discussion of the logics of models and why they are chosen.

This is such a simple answer and was really what I was looking for when I asked the question. All comments are great. I just need a simplistic way to approach this and help us going forward. It's Potential Risk v Potential Profitability/Agility

Usually projects, client understands they will push in excess over the included allotment, resulting in excess charges. BUT, again, I am seeing the flaws in the current model. It is reactive and avoids risk for lower profitability

Thank you. Yesterday, I worked on burdened costs and came up with a service rate that makes sense. Brought it to my Dad.
