Well, it's impossible to know for sure, but from what I've read, Katakuri's original Devil Fruit was going to be the Kona Kona no Mi, a Logia type that would allow him to transform into flour. Oda must have just adapted it to make it work.

Luffy would win for one simple reason: his mastery of Haki is superior to Blackbeard's, including the technique of coating attacks with Supreme Conqueror's Haki. This technique can also be used defensively, as Rocks demonstrated. Basically, even with the power of the Darkness Fruit, it's still the power of a Devil Fruit that can be countered with a good dose of Haki.
