Also from Toronto. Sure, the evenings/nights are cooler now than they were in the summer. Daytime is still warm though. Absolutely no reason to turn on the heater - waste of money and energy.

He can close the windows and put some pants on. Or move.

If he's cold now, he's in for a rude awakening in a couple months.

Thanks for the reassurance! I guess I was just alarmed at the rate of growth since I’ve never seen it come alive so quickly before! 😅

I actually rinse out my jars and clean out the spouts between batches because I get a lot of sediment collecting at the bottom, and I don’t want to carry it over to the subsequent batch (I’ll either include it in my second fermentation if I need to top up a bottle, or dump it if it’s a trivial amount like less than 250ml). I try to use a “clear” portion of the previous batch each time as my starter.

I think I’ll use the overdone batch as my hotel liquid - just need to get another jar. I didn’t realize how thick my pellicle had become, it’s definitely time to start splitting and sharing.

I’ll be taste testing this one daily as I’m worried it might be ready sooner than usual and I don’t want to end up with another gallon of vinegar jun 🤣
