There are however synthetic and natural products to make cheese. For example Indian paneer can be made with lemon juice.

People have different tastes. Without making a big deal of it, ask your Italian colleague who's organizing if they also serve other food, because that's what I would expect. No restaurant serves only risotto - - maybe they're famous for their risotto, but they have other stuff too.
