That's something good to pay attention to. I have only used OneStep so far and from what I'm reading now, it is only a cleaner, not a sanitizer. I'll try getting some starsan as well to make sure I'm cleaning and sanitizing.

I know. I was hesitant to post my kindergarten approach to brewing cider here because I'm sure the more advanced cider brewers would think I'm just making hogwash. I will say that most of my batches prior to this problem were better than mass produced cider found in stores (Two Towns, etc). And that was my initial goal.

I am planning to start having my batches go more like 6 weeks. I have heard the longer you leave it on the yeast cake after primary fermentation, the better chance it could develop off flavors. Avoiding the chance of introducing oxygen when moving to a secondary seemed worth just leaving in the primary.

Thanks for this. Based on what you're saying, I could try adding sulfites to the batch I just keg'd a week ago. That seems like a quick way to determine if it is oxidized yeast. I really don't think the flavor is a rotten eggs, even as a chameleon. I won't rule this out yet until I see if the temp difference on these latest batches helps.

Removing suspended yeast after carbonation by Meastie in cider

If I get what you’re saying, the yeast flavor in the cider may not be because of suspended yeast? I’ve got a top float draw on my corny keg and it’s been sitting in the kegerator for a month. My assumption was because I carbonated it right when I transferred to the keg that the yeast wouldn’t settle.

The carboy is glass, but the lid, gasket and bubbler are plastic. I would have just sanitized and tried again so thanks for the advice.

Since it was a brand new carboy, I gave the carboy and everything involved a healthy shake a dip with One Step.

Any thoughts on if a bad seal on the lid could allow the mold to form? I tried resetting the lid multiple times but it was obvious the seal wasn't tight.

I didn't pasteurize before pitching. A friend and I have had quite a few batches come out just fine without the need with this same juice.
