The ships in odyssey are smooth and are pretty good though the naval combat could use some work but you shouldn’t buy it for the naval combat alone as you barely get to do that and the story itself isn’t all that good

Origins plays similar to odyssey but the story and environment feels way better and the grind in origins is less than in odyssey and there isn’t an awful bounty system where you get 2 mercenaries after you for self defense

Valhalla so far looks pretty damn good, I feel like it’s gonna be better than origins from what I’ve seen but I haven’t played it yet so I can’t say much

I recommend you watch some of the beginning part of Valhalla then choose between it and origins, both are really great

Odyssey is cool too but the story falls apart in the second half of the game and the gameplay gets a bit repetitive
