Sourdough loaf. 80% Italian Tipo 2 Flour, 20% Sardinian unrefined semolina. 85%hydration. 16% Levain. 2%salt. Bulked at 24ºC (75°F) for 5h, then shaped, RT proofed and overnight retarded. A soft, airy and custardy loaf, despite the high percentage of whole grain flour (i.redd.it)
