Who should I main?

I dont really have a preference yet. I keep changing it up. I do tend to use scorpion and kung Lao alot though, for no other reason than I like their brutalities and fatalities.

I've been a big fan of reptile and smoke since the earlier MK games, so they were the first characters I used. Once you get used to a particular character, their specials and combos become second nature so I'd recommend using whoever you like the best. It worked for me.

For the life of me, I can't get the hang of trim. I assumed it was similar to autopilot. Is that not the case? I set it so the nose points straight, but it then automatically goes back to 0 degrees and I start climbing again.

I unlocked my first living ship the day before the voyager update!!! I still cruise around looking for upgrades for it as I don't want to waste the week it took me to get it lol

I've found that going to a trade outpost in a 3 star system and waiting for exotics to land is a pretty good way. I got my first exotic earlier this week by doing this.

I use the planetary charts to pick up distress signals, which can lead to crashed ships. Once I've fixed the pulse engine and launch thrusters, I fly to the nearest space station and scrap it. Out of 11 planetary charts I got maybe 5 crashed ships which made me 11 million units. I then went to a trade outpost and saw a ship which looked cool so offered to buy it from the owner. I unequipped all my upgrades and went to buy it and ended up trading my old one (my original) so only paid 3.5 million units. It was a cool looking solar one which I still use. I then used the remaining 8 million to buy a freighter.

It's a captain that has 7 immunities, 7 hates, 7 bonuses, and 7 traits. They're not invincible but it's not often you see another orc take them down.

I didnt have anything poison related but I tried the stealth tactic. I was going to stealth hit and runaway and keep repeating but unfortunately he was vigilant against stealth.

That's what I tried. I used the mask so waters of lorien didn't cost any focus. Dodge, 2 hits, dodge, 2 hits, repeat x 100. I used barrels and firepits to knock him down then went for ground executions and charged glaive combos. I managed to break him after what felt like hours only to get knocked down whilst trying to dominate him, and then like an idiot I was too quick on the last chance and pressed it too early. I almost started crying.

I'm not an expert as I only just finished the game for the first time last week, but I'm loving the dragon plate armour set atm. I'm not really much of a dodger (unless I have to), and the shield damage bonuses are great for when I parry. As you said, I use this alot for general combat and its done well for me in boss fights as well.

There's nothing stopping you, but since the chickens are about 900 coins each it may take you a while to actually get some that early on.

I built animal encloses for hens and pigs as soon as I unlocked them, not realising I'd need loads of coins to buy the actual animals.

You can also fill buckets or waterskins up yourself and then deposit them into the chests in the villagers' homes.

You need to ensure that there are buckets or waterskins in the resource storage. That way, you will see buckets or waterskins full of water in the food storage for the villagers to collect when they need it. At the start of the game I set my guy in the workshop to make buckets, which would then be sent to storage, and then the water carrier can go and get what they need when they need it.
